Caramel Date Sauce

Caramel Date Sauce
You will need: Blender or food processor. *Due to thick consistency of the sauce (almost turns ‘toffee-like’), be careful not to burn out the motor of smaller blenders. In this instance, add small amounts of Spring Water to slightly thin the sauce.

  1. Drain Dates and blend all ingredients together until smooth. Add back a little of the water, bit by bit, to help blend if too thick.
Recipe Notes

*Store sealed in a glass jar in the fridge. Eat within 1-2 days

*Serving Suggestions:
You can use this cream/sauce to top or add to a great many things, let you imagination run wild.

-Enjoy as a topping on any other Desserts / Sweet Treats.

-Enjoy as a topping on fresh cut strawberries or other fruit of your choice.

-Mix through or serve as an accompaniment to the Vanilla Chia Pudding.

*Choose the cleanest ingredients possible:

-Choose spray-free/organic fresh produce for fresh ingredients where possible, and if buying conventional, rinse in diluted white vinegar water to remove 

 -Choose dry ingredients (i.e. nuts, seeds, dried fruits ) that are spray-fee/organic where possible, and which don’t have preservatives such as sulphur dioxide.

- Choose virgin, cold-pressed Coconut Oil in glass where possible. It should be pure white in colour. Do not choose cheaper, deodorised/neutral flavoured coconut oils that are off-white.

 -Choose Coconut Cream and Coconut Milk that is clean/free from additives, preservatives and E numbers. Plain Coconut Cream/Milk is better than the ones with added guar gum as this changes the consistency of recipes. You can use Nut Milk as an alternative. 

-Choose to homemade Nut Milk instead of buying. Most store bought ones have additives and stabilisers. Quick Tip: It’s easy to make your own: just grind ¼ cup nuts, then blend with 1 cup water. 

-Choose whole fruits over optional sweeteners if you need to add more sweetness. My preferred choice is Date Paste (pre-soaked Dates). Quick Tip: Keep a jar filled with Dates covered with water, in the fridge ready to go and use as is (instead of actually blending to make Date Paste).

Pancake Bites with Chocolate Ice-cream
You will need: Blender. One which has grinder blades where at least 2 blades lie flat, to grind nuts and seeds. *A coffee grinder can also be used to grind nuts and seeds. Stainless steel/non-toxic pan, wooden spoon or silicon spatula, and Coconut Oil for cooking or non-toxic baking paper/parchment paper.

Instructions
  1. Pancake Bites: First grind nuts/seeds together using the grinder attachment on your blender (for smoother end consistency). *A coffee grinder can be used to grind nuts/seeds.
  2. Pancake Bites: Mix all dry ingredients, except the Nut Mix, together in a bowl.
  3. Pancake Bites: Mash the Banana, and add to the dry ingredients, along with all the remaining wet ingredients and mix well using a wooden spoon or silicon spatula.
  4. Pancake Bites: Lastly, add and mix in the Nut Mix to the batter.
  5. Pancake Bites: Add a little Coconut Oil - or use non-toxic baking paper/parchment paper - to a med-high heat pan and spoon the mixture into flapjack pancakes shapes.
  6. Pancake Bites: Cook on medium heat until slightly browned on both sides. Turn down heat until cooked right through.
  7. Ice-cream: First grind nuts/seeds together using the grinder attachment on your blender (for smoother end consistency). *A coffee grinder can be used to grind nuts/seeds.
  8. Ice-cream: Blend ground Cashews and Coconut Cream until smooth.
  9. Ice-cream: Add all ingredients except frozen Banana & Ice, and blend again.
  10. Ice-cream: Add Ice as needed and blend. And/or add a little Spring Water if becomes too thick to blend.

*Store pancake batter sealed in a glass jar in the fridge (if not cooking immediately). Eat within 1-2 days

Raw Chocolate Boat Cookies

You will need: Blender. One which has grinder blades where at least 2 blades lie flat. And/or food processor. NOTE: Optional - Allow 30 minutes to cool in fridge after making to allow Chocolate filling to set/solidify.

Instructions
  1. Chocolate Filling: Blend all ingredients together until smooth (include the water the Dates were soaked in). Set aside.
  2. Raw Cookie Base: Blend/process the Almonds & Dates until crumbly in consistency.
  3. Press firmly into balls, and then into an oval-like shape in the palm of your hand.
  4. Press a thumb into the middle of the ball to create a place to add the Chocolate Filling.
  5. Using a spoon, add the Chocolate Filling to each raw cookie.
  6. Optional: Place in fridge for 15min+ to allow to set before serving.

Poached Pears with Vanilla, Cashew & Banana Cream

Poached Pears with Vanilla, Cashew & Banana Cream
You will need: Blender. One which has grinder blades where at least 2 blades lie flat, to grind nuts and seeds. *A coffee grinder can also be used to grind nuts and seeds. Stainless steel pot, knife & cutting board, vegetable peeler.

Vanilla, Cashew & Banana Cream
Instructions
  1. Peel the Pear and cut in half.
  2. Add the Spring Water, Cardamom Pods (crush to open the pods first), Vanilla Seeds, Cinnamon, and Rice Malt Syrup to the pot and stir to dissolve the sweetener.
  3. Place the Pears flesh side down in the water and bring the pot to a boil. Turn down the heat to a simmer and poach the pear halves for 30 - 40 min.
  4. Optional: Once you remove the Pear halves, you can turn the heat up and continually stir until moisture evaporates and you are left with a flavourful syrup to use as a topping.
  5. Cream: Blend/grind Cashew Nuts into flour-like consistency.
  6. Cream: Add the rest of the ingredients except for the Banana, and blend until smooth.
  7. Cream: Add the Banana and blend again. You can add a little ice to the blender is you would like to make the cream into an ice-cream.

  1. Blend all ingredients together until it becomes a well combined mixture and the Coconut is sufficiently processed so that it’s soft.
  2. Shape mixture into a cupcake shape, top with slices of fresh or dried Banana, and sprinkle Cinnamon on top.

Veggie Chilli Bowl

Mexican Seasoning Spice Mix
Instructions
  1. Mexican Seasoning Spice Mix: Blend all spices together and set aside.
  2. Add Coconut Oil to a large pot on high heat. Roughly chop Onion, add to the pot and cook until soft.
  3. Finely chop Chilli with the seeds and stir into the pot.
  4. Roughly chop the Capsicums / Bell Peppers and stir into the pot.
  5. Finely chop the Mushroom and grate the Carrot and stir into the pot.
  6. Finely chop the Garlic and add this, plus 2 ½ tbsp of Mexican Seasoning Spice Mix and stir into the pot.
  7. Add the Tomato Passata, Vegetable Stock and Coconut Sugar.
  8. Chop the Squash into small cubes, wash and drain the Beans and add to the pot.
  9. Slice the Zucchini and add to the pot to cook for 5 minutes before serving.
Recipe Notes

*Serve with Tomato Salsa, Guacamole in a bowl or in Lettuce leaf cups.

Clean Eating Tips to remember:

*Stainless Steel and Ceramic or Glass Cookware are the safest materials to cook in with the least amount of leaching into food when heat is applied. A high quality set of cookware is essential and will last a lifetime - and a longer lifetime at that because of it. 

*Stainless Steel, Food-grade Silicon or Wooden Cooking Utensils are the safest materials to cook with with the least amount of leaching into food when heat is applied. 

*Olive Oil - it’s best not to cook with Olive Oil, always consume raw. Best to drizzle Olive Oil over food just before serving. It’s better to avoid cooking with Olive Oil as it is a delicate oil and is damaged and becomes harmful to ingest when heated.

*Better oils for cooking with have a higher smoke point/less free radical forming when heated— Coconut Oil, Macadamia Oil and Grapeseed Oil

  2. Chia Pudding: In a separate glass jar, throw the first group of ingredients in a jar, put the lid on and shake well. Shake a few times to prevent Chia Seeds from sticking together.
  3. Chia Pudding - Optional: Place in fridge for 15min+ to allow the seeds to expand/set before serving.
  4. Serve Caramel Date Sauce on top of the Chia Pudding or mix into the pudding.

  1. Chocolate Sundae Sauce: Blend everything except the Cacao Butter together until smooth.
  2. Chocolate Sundae Sauce: Gently *warm the Cacao Butter until melted, add to mixture and blend again (see recipe notes below for instructions on how to warm Cacao Butter). Set aside.
  3. Sweet Vanilla Ice-cream: Blend/grind Cashew Nuts into flour-like consistency.
  4. Sweet Vanilla Ice-cream: Add the rest of the ingredients except for the ice, and blend until smooth.
  5. Sweet Vanilla Ice-cream: Add Ice as needed and blend. And/or add a little Spring Water if becomes too thick to blend.
  6. Layer Fruit/Berries, Chocolate Sauce, Hazelnuts & Ice-cream, and repeat another layer. Top with extra Chocolate Sundae Sauce & Berries.
Recipe Notes

*To melt Cacao Butter - I heat some water in a pot, then place a stainless steel bowl in the pot, add a little heated water to the bowl, and then add a glass bowl in which the Cacao Butter can melt without it getting too hot/burning. We want the Cacao Butter to remain raw (healthy for us), so avoid heating it more than 40 °C / 104 °F.

Chocolate Mousse

This recipe is: Gluten-free (GF), Wheat-free (WF), Dairy-free (DF), refined Sugar-free (SF), Plant-based/Vegan (PB), Vegetarian (V)

You will need: Blender. One which has grinder blades where at least 2 blades lie flat, to grind nuts and seeds. *A coffee grinder can also be used to grind nuts and seeds

Instructions
  1. Blend Cashews until ground into a flour-like consistency.
  2. Blend ground Cashews and Coconut Cream until smooth.
  3. Drain Dates, then blend all ingredients, except the Coconut Oil, until smooth.
  4. Add Coconut Oil and blend again.
  5. Optional: Allow Mousse to set in fridge for 15 min+.
Recipe Notes

*You can enjoy straight away or put in the fridge for 15-30 minutes to set for a more Mousse-like consistency.

*Store sealed in a glass jar in the fridge. Eat within 1-2 days (if it lasts that long!) 

*Choose the cleanest ingredients possible:

-Choose spray-free/organic fresh produce for fresh ingredients where possible, and if buying conventional, rinse in diluted white vinegar water to remove 

 -Choose dry ingredients (i.e. nuts, seeds, dried fruits ) that are spray-fee/organic where possible, and which don’t have preservatives such as sulphur dioxide

 - Choose virgin, cold-pressed Coconut Oil in glass where possible. It should be pure white in colour. Do not choose cheaper, deodorised/neutral flavoured coconut oils that are off-white.

 -Choose Coconut Cream and Coconut Milk that is clean/free from additives, preservatives and E numbers. Plain Coconut Cream/Milk is better than the ones with added guar gum as this changes the consistency of recipes. You can use Nut Milk as an alternative. 

-Choose to homemade Nut Milk instead of buying. Most store bought ones have additives and stabilisers. Quick Tip: It’s easy to make your own: just grind ¼ cup nuts, then blend with 1 cup water.
