Chocolate Cherry Brownie Bites

Chocolate Cherry Brownie Bites
You will need: High power blender or food processor. One which has grinder blades where at least 2 blades lie flat, to grind nuts and seeds. *A coffee grinder can also be used to grind nuts and seeds.

Instructions
  1. Steam Chestnuts for 10 - 15 min. Use a stainless steel colander or sieve to suspend the Chestnuts in a pot above boiling water (without letting the water touch the nuts).
  2. Let cool, then cut into halves. Scrape the soft nut flesh out using a teaspoon and set aside.
  3. Gently *warm the Chocolate Chips until melted (see recipe notes below for instructions on how to warm Chocolate Chips).
  4. Pulse together the Chestnut flesh, Almonds, Pecan Nuts, Coconut Flakes, Dates, Cacao Powder, Salt.
  5. Combine the mixture with the melted Chocolate Chips and the Cherries and mix well using a wooden spoon or silicon spatula. Use a little warm Spring Water to help with mixing (use only small amounts at a time).
  6. Line a baking tray with non-toxic baking paper/parchment paper and spread the mixture even over the surface. Use a knife to cut the tray into squares. Place in freezer for 5 minutes to allow to set.
Recipe Notes

*Chocolate Chips I buy are simply made from raw organic Cane Sugar, Cacao Butter and Cacao Powder. 

*Can make and use 3x portions of our Chocolate Sundae Sauce as a replacement if you can’t find clean Chocolate Chips.

*To melt Chocolate Chips - I heat some water in a pot, then place a stainless steel bowl in the pot, add a little heated water to the bowl, and then add a glass bowl in which the Chocolate Chips can melt without it getting too hot/burning. We want the Cacao Butter to remain healthy for us, so avoid heating it more than 40 °C / 104 °F.

*Enjoy straight away or allow to set in fridge for 15+ minutes. Store in a sealed container in the fridge or freezer.

*Choose the cleanest ingredients possible:

-Choose spray-free/organic fresh produce for fresh ingredients where possible, and if buying conventional, rinse in diluted white vinegar water to remove.

-Choose dry ingredients (i.e. nuts, seeds, dried fruits ) that are spray-fee/organic where possible, and which don’t have preservatives such as sulphur dioxide.

- Choose virgin, cold-pressed Coconut Oil in glass where possible. It should be pure white in colour. Do not choose cheaper, deodorised/neutral flavoured coconut oils that are off-white.

-Choose Coconut Cream and Coconut Milk that is clean/free from additives, preservatives and E numbers. Plain Coconut Cream/Milk is better than the ones with added guar gum as this changes the consistency of recipes. You can use Nut Milk as an alternative. 

-Choose to homemade Nut Milk instead of buying. Most store bought ones have additives and stabilisers. Quick Tip: It’s easy to make your own: just grind ¼ cup nuts, then blend with 1 cup water. 

-Choose whole fruits over optional sweeteners if you need to add more sweetness. My preferred choice is Date Paste (pre-soaked Dates). Quick Tip: Keep a jar filled with Dates covered with water, in the fridge ready to go and use as is (instead of actually blending to make Date Paste).

Raw Strawberry Jam Ice-cream

  • 1 tbsp Beetroot Juice (made from ¼ Beetroot & ¼ Orange to give bright pink colour and act as natural preservative)

  • 1 tbsp Beetroot Juice (made from ¼ Beetroot & ¼ Orange to give bright pink colour and act as natural preservative)
Instructions
  1. Blend the Dates and Water into a paste.
  2. Add the Rice Malt Syrup (or other natural sweetener) and half the roughly chopped Strawberries. Plus until just mixed together.
  3. Add the rest of the roughly chopped Strawberries - optional: pulse again if you want less chunky.
  4. Stir in the Chia Seeds and Beetroot Juice using a fork until mixed together well.
  5. Blend 1 cup of the Strawberry Jam Sauce with the Coconut Cream / Milk until smooth.
  6. Add Ice as needed and blend. And/or add a little Spring Water if becomes too thick to blend.
Recipe Notes

*You can put the Strawberry Jam Sauce in the fridge for 15-30 minutes to allow the Chia Seeds to expand to get more of a jam-like consistency, before making ice-cream (or keep in fridge ready to make ice-cream as needed).

*Store Strawberry Jam Sauce sealed in a glass jar in the fridge. Eat within 1-2 days.

*Once you’ve made ice-cream, enjoy straight away.

Chocolate Almond Bliss Balls

Instructions
  1. Gently *warm the Cacao Butter until melted (see recipe notes below for instructions on how to warm Cacao Butter).
  2. Pulse together the Almonds, Sunflower Seeds, Coconut Flakes, Dates, Cacao Powder, Salt.
  3. Mix separately, the melted Cacao Butter, Coconut Oil and Rice Malt Syrup together.
  4. Combine and pulse blend the two mixtures together.
  5. Firmly press and roll small balls of the mixture into Bliss Balls.
Recipe Notes

* To melt Cacao Butter - I heat some water in a pot, then place a stainless steel bowl in the pot, add a little heated water to the bowl, and then add a glass bowl in which the Cacao Butter can melt without it getting too hot/burning. We want the Cacao Butter to remain raw (healthy for us), so avoid heating it more than 40 °C / 104 °F.

*Enjoy straight away or store in a sealed container in the fridge or freezer. 

*Pressing mixture into Bliss Balls: You may need a little ‘elbow grease’ to press the mixture into balls. I usually take a handful and just keep pressing very firmly, and keep adding more mixture until I have desired size and the mixtures sticks together properly.

-Choose spray-free/organic fresh produce for fresh ingredients where possible, and if buying conventional, rinse in diluted white vinegar water to remove.

-Choose dry ingredients (i.e. nuts, seeds, dried fruits ) that are spray-fee/organic where possible, and which don’t have preservatives such as sulphur dioxide.

Instructions
  1. Cake Cupcakes: Pre-soak Dates: in ½ cup warm Spring Water. Once soft, blend into a paste.
  2. Cake/Cupcakes: Add Chia Seeds to ¼ cup Spring Water.
  3. Cake/Cupcakes: Blend/grind Cashew Nuts into flour-like consistency.
  4. Cake/Cupcakes: Mix all ingredients together in a mixing bowl using a wooden spoon or silicon spatula.
  5. Cake/Cupcakes: Shape the cupcake mixture into balls and place in silicon or paper cupcake cups and press slightly into the moulds.
  6. Icing: Blend Cashews until ground into a flour-like consistency. Add the rest of the ingredients and blend until smooth.
  7. Icing: Using a spoon, add a dollop of the Lemon Cream Icing Frosting to each cupcake and smooth over the surface using the back of the spoon.
  8. Optional: Sprinkle chopped Walnuts, finely grated Carrot and a small pinch of Cinnamon to the top of each cupcake.

*I usually store cupcakes and icing separate in the fridge and add icing just before eating so that they are fresh every time!

  1. Grind/blend Cashews into a flour-like consistency.

  3. Drain Dates, then blend all ingredients, except the Coconut Oil, until smooth.

  5. Add the Hazelnut Extract and Nut Butter and blend again.
  6. Optional: Add chopped Hazelnuts and your choice of Berries as a topping.

  1. Caramel Date Sauce: Drain Dates and blend all ingredients, except Ice, together until smooth.
  2. Use ½ of the Caramel Date Sauce, add Ice as needed and blend. And/or add a little Spring Water if becomes too thick to blend.

  1. PREP 2+ hours BEFORE: Pre-soak Dates and Cashews separately.
  2. Base: Pulse all ingredients together into crumb-like consistency. Press into 8inx8in (20x20cm) cake mold.
  3. Middle Layer: Blend Cashews until smooth & creamy - add water as needed to be able to blend into smooth consistency. Add the rest of the ingredients and blend until smooth. Layer mixture evenly over the crust.
  4. Top Layer: Blend Spring Water and Chia Seeds until mixture thickens. Add half the Blueberries, Rice Malt Syrup and Coconut Oil. Blend until smooth. Add remaining Blueberries and pulse to roughly combine. Layer mixture evenly over the middle layer.
  5. Topping: Layer the whole Blueberries evenly over and into the top layer and freeze for 1-2+ hours. Allow 5 - 10 minutes to thaw once removed from freezer before serving.

  1. Blend/grind Cashews into a flour-like consistency.
  2. Blend ground Cashews and Coconut Cream until smooth.

-Choose spray-free/organic fresh produce for fresh ingredients where possible, and if buying conventional, rinse in diluted white vinegar water to remove

 -Choose Coconut Cream and Coconut Milk that is clean/free from additives, preservatives and E numbers. Plain Coconut Cream/Milk is better than the ones with added guar gum as this changes the consistency of recipes. You can use Nut Milk as an alternative. 

-Choose to homemade Nut Milk instead of buying. Most store bought ones have additives and stabilisers. Quick Tip: It’s easy to make your own: just grind ¼ cup nuts, then blend with 1 cup water. 

-Choose whole fruits over optional sweeteners if you need to add more sweetness. My preferred choice is Date Paste (pre-soaked Dates). Quick Tip: Keep a jar filled with Dates covered with water, in the fridge ready to go and use as is (instead of actually blending to make Date Paste).

You will need: Blender. One which has grinder blades where at least 2 blades lie flat. And/or food processor.

  1. Blend all ingredients together until smooth, including the water the Dates were soaked in.

*Store sealed in a container in the fridge. If you store in the fridge, the sauce will set/thicken. Put glass jar in a bowl of hot water to gently melt/soften the sauce again.

Caramel Date Sauce

You will need: Blender or food processor. *Due to thick consistency of the sauce (almost turns ‘toffee-like’), be careful not to burn out the motor of smaller blenders. In this instance, add small amounts of Spring Water to slightly thin the sauce.

  1. Drain Dates and blend all ingredients together until smooth. Add back a little of the water, bit by bit, to help blend if too thick.
